{ a cherry recipe and cherry-feeding an entire crowd }

I am such a cherry-fan … I could eat kilos of cherries …I don’t because I am not (yet) insane …but they are among my very favorite fruit. But I  must confess I like them fresh, directly form the tree, picking at the cherry tree like a thief magpie …
I don’t really like them cooked whereas it is quite common in France … notably with the famous clafoutis aux cerises

2 years ago, visiting my family in Normandie for a special occasion (one of my sweet cousin’s wedding) I stumble upon this recipe  while dawdling in my aunt Nicole cookbooks collection … As at this moment I had 2 enormous cherry trees in my yard, I thought I would give it a try …lucky me. 

We have moved since and  don’t have cherry tree anymore (except the little branch rising above the wall, from my neighbor’s yard  … poor little fruits, they have had a very little lifetime) but I know where to go to get some …you can trust me on that. As I hate wasting, in addition to distribute cherries around, I have been gathering many cherry-based recipes to use all these little delicious fruits …

These 2 trees are over 5O years old … so huge and well …“generous” ..I was able to cherry-feed the entire village. no kidding.  At the same period, during the previous years, you would have see me welcoming people coming  to harvest some fruits …
As years passed, they kept asking me about recipes … I’ve shared the following a lot  … It is funny because when I meet people , let’s say.;at the fresh market, they often talk me about it … even during the winter period…My husband JP did an excellent work (as we used to prepare  fresh basket for his coworkers too) at promoting it around… and  name it “le crumble aux cerises de sabine” …

This little crumble is quite simple and has nothing original, but we like it. We like the way the cherries make bubble while baking, providing the dish, different consistencies … I like eating the cherry jam-like syrup , on the edges, “à la fin” …

le crumble aux cerises de sabine 

Here's one of my favorite crumble :

Preheat oven to 400 degrees.
Pull apart 500 g of fresh cherries , remove pits, and put them in a pie plate. Sprinkle with very little pieces of butter and some vanilla flavored sugar ... Allow the flavor to infuse a little.
Melt 1 stick of butter and stir in 3/4 cup sugar and 1/2 cup flour + 1/4 cup almond powder & some vanilla.
Cover cherries with the mixture. Bake for about 10 to 20 minutes, depending on your oven  and serve warm, with vanilla yogurt ice cream... or not .... you can bake them in individual or unique portion ... both work very well ... BON APPETIT !

Important note : concerning the amount of sugar, I recommend you to adjust it to your variety of cherries. The one I use in this recipe are a very little sour …and needed lots of sweetness. so taste your cherries first :)

Yummy! My mom makes something similar with fresh peaches. As soon as the weather warms up, I start counting down the days until peaches are in season :-)

I think I'm going to give this a try...Layla LOVES cherries.

I think the blogworld is going crazy for cherries today! I've been eating my fair share too - but not as deliciously as you've been, although I can't complain. One cherry alone is sheer perfection too!
